Easy Enchilada Recipe


AM wanted me to post my enchilada recipe, AM you could try refried beans instead of meat.



10 -12 flour tortillas (straight from package)
1 – 2 lbs of hamburger meat (I use 96% lean) or chicken
5 - 6 cans of enchilada sauce (depending on meat may need another can)
1 large chopped onion
Jalapeño peppers chopped
Lots of cheese

Cook meat and onions. Add sauce and jalapenos to meat, let simmer (sometimes I let it set over night). Spoon mixture in tortillas add cheese, roll and place in baking dish. When finished pour remaining sauce over tortillas then top with more cheese. Bake at 400 for about 25 minutes. Enjoy!

Thanks for the recipe. What kind of cheese exactly do you use? I think the cheese makes all the difference. I was also skimping on the sauce, by only using one can! Yikes!

AM - I use Kraft mozzarella(sp?) and lots of it.
